Chipotle Sour Cream Chicken

A recipe I found on Hyvee.com, a grocery store in this area. I've made it a few times now, which apparently isn't enough for my fiance, because he keeps requesting it!

• Yields: 4 pieces

Ingredients

• 4  small boneless chicken breasts (or 2 large)
• 1⁄3 cup sour cream
• 1⁄2 cup  breadcrumbs
• 1⁄2 teaspoon  dried chipotle powder
•  salt and pepper

Directions

1. Preheat oven to 350 degrees F.
2. Coat each chicken breast with sour cream (if using 2 large, cut in half first).
3. Stir together bread crumbs, chipotle, salt, and pepper.
4. Roll each chicken breast in breadcrumb mixture.
5. Place in a greased 9 x 13 inch baking dish.
6. Bake uncovered 20 to 25 minutes or until internal temp reaches 165 degrees.
