Chipotle Sour Cream Chicken

Ingredients
- 4 small boneless chicken breasts (or 2 large)
- 1⁄3 cup sour cream
- 1⁄2 cup breadcrumbs
- 1⁄2 teaspoon dried chipotle powder
- salt and pepper
Directions
- Preheat oven to 350 degrees F.
- Coat each chicken breast with sour cream (if using 2 large, cut in half first).
- Stir together bread crumbs, chipotle, salt, and pepper.
- Roll each chicken breast in breadcrumb mixture.
- Place in a greased 9 x 13 inch baking dish.
- Bake uncovered 20 to 25 minutes or until internal temp reaches 165 degrees.
