Chipotle Chocolate Chunk Brownie Bites

Based on a recipe from Penzey’s Spices Spring 2010.

Yields: 48 bite-sized pieces

Ingredients

  • 1  cup all-purpose flour
  • 14 teaspoon salt (omit if using salted butter)
  • 1  teaspoon  ground chipotle chile pepper (or 2 teaspoons if desired)
  • 1  teaspoon ground cinnamon
  • 1  teaspoon ground ginger
  • 34 cup butter (1 1/2 sticks)
  • 4  ounces  unsweetened chocolate
  • 3  large eggs
  • 2  cups sugar
  • 3  tablespoons water
  • 1  teaspoon  double strength vanilla extract
  • 23 cup  semisweet chocolate chunk, morsels

Directions

  1. Preheat oven to 350°F
  2. Grease a 9x13 baking pan.
  3. Using a large bowl, sift the flour, salt, chipotle pepper, cinnamon and ginger together and set aside.
  4. Using a heavy saucepan over very low heat, slowly melt the butter and chocolate, stirring frequently. Set aside to cool.
  5. Add eggs to large bowl and beat until foamy.
  6. Gradually add sugar to eggs, stirring constantly. Add the water, vanilla and melted butter/chocolate mixture.
  7. Stir in the dry ingredients until well blended.
  8. Fold in the chocolate chunks.
  9. Pour into prepared pan and bake for 30 minutes.
  10. Allow to cool slightly before cutting.
