Chipotle Barbecue Sauce, Texas Style

Yields: 3-4 cups
Ingredients
- 1 cup ketchup
- 1⁄2 cup jaggery (panela)
- 1 teaspoon Worcestershire sauce
- 1⁄4 cup lime juice
- 1 1⁄2 cups onions, chopped
- 2 garlic cloves, chopped fine
- 2 tablespoons pureed chipotle chiles
- 12 ounces tomato paste
- 12 ounces beer
- black pepper
Directions
- Place all ingredients in a 3 qt saucepan, and bring to boil.
- Lower heat and cover and simmer for about 2 hours, stirring occasionally, do not let it burn.
- This sauce can slowly simmer until ready to use.
