Chinese Salad

Ingredients
- 1 (12 ounce) bag Baby Spinach
- 1 (8 ounce) package bean sprouts
- 3 stalks celery, sliced
- 2⁄3 cup raisins
- 2 cups sliced mushrooms
- 2 sweet red peppers, chopped small
- 1 teaspoon parsley
- 2 cups cashews
- 1 cup rice, cooked and cooled
- vinaigrette
- 1⁄4 cup soy sauce
- 1⁄2 cup vegetable oil or 1⁄2 cup olive oil, your preference
- 3 garlic cloves, minced
Directions
- Toss veggies in a bowl.
- Mix vinaigrette in a separate bowl and allow to marinate for an hour.
- Pour vinaigrette over salad just before you are ready to serve and toss.
