Chinese Noodles in Peanut Sesame Sauce

Ingredients

  • 5  ounces  chinese noodles
  • 3  tablespoons peanut butter
  • 1 12 tablespoons  rice wine vinegar
  • 12 teaspoon  hot  oil
  • 3 12 tablespoons  sesame oil
  • 1 12 tablespoons soy sauce
  • 2  teaspoons sugar
  • 1  tablespoon hot water
  • 2  scallions, minced

Directions

  1. Cook noodles in a large pot of boiling water, gently separating the strands with a long fork as they soften, until barely tender -- about 2 minutes.
  2. Drain and rinse under cold running water to stop the cooking. Drain well and dump into a bowl and toss with .5 tbs of th sesame oil to prevent sticing.
  3. In a small bowl, gradually stir the remaining oil into the peanut butter.
  4. Blend soy sauce, rice wine vinegar, sugar, hot oil and hot water.
  5. Spoon over noodles and toss to coat well.
  6. Add scallions and toss lightly.
