Chinese Chews

Yields: 36 small bars
Ingredients
- 1⁄2 cup shortening
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup flour
- 1⁄2 teaspoon salt
- 1⁄2 cup nuts (pecans or walnuts)
- 1⁄2 cup shredded coconut
- 1⁄2 cup chopped dates
Directions
- Preheat oven to 350 degrees.
- Cream shortening and sugar.
- Add eggs and vanilla.
- Mix flour and salt with nuts, coconut and dates.
- Fold flour mixture into creamed mixture.
- Bake in greased 8 x 8 inch baking dish for 20 minutes.
- Cool slightly on a rack before cutting into bars.
