Chinese Chews

Yields: 60 cookies
Ingredients
- 2 cups sifted flour
- 1⁄2 teaspoon salt
- 4 ounces candied orange peel, finely chopped
- 4 ounces candied lemon peel, finely chopped
- 2 cups walnuts, coarsely chopped
- 4 eggs
- 1 teaspoon vanilla
- 1 lb dark brown sugar
- icing sugar
Directions
- Preheat oven to 350*. Mix flour, salt, both candied peels and walnuts in a bowl.
- Beat eggs and vanilla in another bowl, with electric mixer until foamy. Add the brown sugar and keep beating until thick and creamy. Stir in the flour-fruit-nut mixture & combine.
- Pour into a lightly greased 9" x 13" pan. Bake @ 350* for 45-50 minutes. Cool and sprinkle with icing sugar. Cut into bars or squares.
