Chilli Pork Tenderloin

This roasted pork dish is easily marinaded in a chilli sauce for a sensational dinner.

  1. Trim tendons and fat from the pork. Mix 3 tbsp of chilli sauce with the lime rind, oil, garlic and spices in a shallow dish. Add the pork and coat well. Leave to marinate at room temperature for at least 1 hour.
  2. Preheat oven to 180°C Put the pork in a small roasting dish with the marinade and roast for 30 to 40 minutes, depending on the thickness of the meat.
  3. Leave the pork to rest for 10 minutes on a board. Mix the juices from the roasting dish in a small pan with the remaining 3 tbsp of chilli sauce and the lime juice, to taste, and warm through.
  4. Slice the pork and serve on plates, with the chilli sauce spooned over the meat.
