Chilled Lemon-Scented Asparagus

  1. Cut woody ends from asparagus.
  2. Combine water, juice, salt and red pepper in the bottom of an asparagus steamer or other vessel large enough to steam whole asparagus. Bring to a boil.
  3. Place asparagus in steamer basket and place basket into pot. Cover, reduce heat to a simmer and steam until crisp-tender. Time will vary depending on thickness of spears, size of cook pot and preferences of chef. Check at 5 minute intervals -- careful! Steam is hot!
  4. Remove spears and refrigerate until cold. Dust with zest just before serving.
