Chili With Squash and Beans

Ingredients
- 1 lb lean ground beef
- 3 cups tomato juice
- 1 (15 ounce) can chunky tomato sauce
- 1 (15 ounce) can red kidney beans
- 2 cups chopped celery
- 2 cups sliced onions
- 2 cups butternut squash, cut in 1-inch pieces
- 1 cup sliced red bell pepper
- 1 cup sliced zucchini
- 1 cup sliced mushrooms
- 1⁄2 jalapeno chili, finely chopped
- 2 garlic cloves, minced
- 1 1⁄2 teaspoons chili powder
- 1 1⁄2 teaspoons ground cumin
- salt and pepper
- 6 lime wedges
Directions
- Cook ground beef in large skillet over medium heat until browned, about 8 minutes, crumbling with a fork.
- Combine beef and remaining ingredients, except salt, pepper and lime wedges, in a slow cooker.
- Cover and cook 6-8 hours.
- Season to taste with salt and pepper. Serve with lime wedges.
