Chili the Light Way

Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 4 garlic cloves, chopped
- 2 tablespoons chili powder
- 2 teaspoons cumin
- 1⁄2 teaspoon ground oregano
- 4 serrano peppers, seeded and diced
- 14 1⁄2 ounces chicken broth
- 28 ounces crushed tomatoes
- 14 1⁄2 ounces tomato sauce
- 1 teaspoon liquid smoke
- 1⁄2 teaspoon lime juice
- 1 lb ground turkey or 1 lb chicken
- 14 1⁄2 ounces kidney beans, drained
- 14 1⁄2 ounces black beans, drained
- 1 (15 ounce) can whole corn
Directions
- In large pot, heat oil and saute onions and peppers until onions start turning translucent. Add garlic for 2 minutes, Add chicken broth, tomato sauces, liquid smoke, lime juice, chili powder, cumin and oregano. Stir together and heat to slow boil, bring down to a simmer. Cook for 1 hour.
- Brown meat and add to chili base. Add drained beans and corn. Cook for 1 more hour.
- Serve with corn bread. De-lisch.
