Chili Roast Potatoes

Use small new potatoes for this recipe. A really unique but easy way to serve potatoes.

  1. Scrub potatoes and cook in a pan of boiling water for 10 minutes. Drain thoroughly.
  2. Pour a little oil in a shallow roasting pan to coat the base. Heat the oil in the oven at 400 degree Fahrenheit for 10 minutes. Add potatoes to the pan and brush them with the hot oil.
  3. In small bowl, mix chili powder, caraway seeds, and salt. Sprinkle over the potatoes, turning to coat.
  4. Add remaining oil to the pan and roast in the oven for 15 minutes, until potatoes are cooked through and can be pierced with a fork.
  5. Using a slotted spoon, remove potatoes, draining the oil. Put in a warm serving dish and sprinkle with chopped basil. Serve immediately.
