Chili Rellenos

Yields: 6 chilies
Ingredients
- 3 eggs
- 1 tablespoon water
- 3 tablespoons flour
- 12 ounces canned whole green chilies
- 10 ounces cheddar cheese
Directions
- Separate the eggs, beat the whites until stiff then fold in the yolks, water and flour.
- Remove seeds and clean chilies, then stuff with cheese.
- Spoon a portion of the egg mixture (large enough to support a chili) onto a heated frying pan then place a chili on top of the mixture. Then add another portion of egg mixture on top of the chili.
- Brown one side then the other.
