Chili Lime Fish Salad

A quick, healthy salad made with white fish.

Ingredients

  • 2  lbs  tilapia fillets or 2  lbs  white fish fillets
  • 2  teaspoons  tajin classic  seasoning, with lime
  • 2  tablespoons butter or 2  tablespoons olive oil
  • 14 teaspoon cumin
  • 1  lime, juice of
  • 1 (9 ounce) package  mixed salad greens
  • 2 -3  cups  Baby Spinach
  • 1  large cucumber, peeled & sliced
  • 1 12 cups  homemade pretzel croutons

Directions

  1. Heat oven to 450°F.
  2. Coat oven safe pan with oil or cooking spray. Place fish in pan. Sprinkle chili lime seasoning.
  3. Roast 5-7 minutes until opaque. Melt butter in small saucepan. Add cumin and lime juice and cook for 1 more minute. Before serving drizzle butter mixture over fish.
  4. Empty greens into large salad bowl. Add the cucumber and croutons and toss together.  Place mixed salad onto 4 individual plates. Top the salad with the fish fillets. Drizzle on ranch dressing.
