Ingredients
- 1 (16 ounce) package pinto beans
- chili seasoning mix
- 3⁄4 cup onion, chopped
- 1 garlic clove, minced
- 1 (15 ounce) can stewed tomatoes, chopped
- 1 lemon, juice of
Directions
- Soak beans overnight.
- After soaking, drain water and add 2 qts water.
- Bring beans to a boil, reduce heat and simmer 2 hours.
- In a skillet, saute onion & garlic.
- Add tomatoes and contents of flavor packet. Simmer 5 minutes.
- Add mixture to bean pot. Simmer uncovered for an hour or until beans are tender.
