Chile Rellenos Casserole

Ingredients
- 1⁄2 lb ground turkey
- 1 cup chopped onion
- 1 3⁄4 teaspoons ground cumin
- 1⁄2 teaspoon oregano
- 1⁄2 teaspoon garlic powder
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1 (16 ounce) can refried beans
- 2 (4 ounce) cans green chilies, drained
- 1 cup shredded monterey jack cheese
- 1 cup corn
- 1⁄3 cup flour
- 1⁄4 teaspoon salt
- 1 1⁄3 cups skim milk
- hot sauce
- 2 large eggs, litely beaten
- 2 large egg whites, litely beaten
- red onion, slices
- chopped cilantro
Directions
- Preheat oven to 350°.
- Brown turkey with onion until crumbly and brown.
- Remove from heat and add next 5 ingredients.
- Arrange half the chilies in 11x17 baking dish& top with half the cheese.
- Spoon turkey mix on top, spread evenly, leaving 1/4 inch border.
- Top with corn and arrange remaining chilies over all.
- Top with 1/2 cup cheese.
- Combine flour, salt and milk in bowl; add hot sauce, eggs, and whites, stirring with whisk until blended.
- Pour over casserole.
- Bake at 350° for 1 hour or until set; let stand five minutes.
- Garnish with onion slices and cilantro.
