Chile Relleno Camarón (Shrimp Stuffed Guero Chile Peppers

This is a great appetizer recipe that I brought back from Baja.

  1. Prepare peppers by making a "T" shaped cut on the side, starting just below the stem. (see photo).
  2. Remove the seeds, core, and veins, leaving the stem intact.
  3. Mince shrimp; add old bay, garlic, and cilantro.
  4. Stuff peppers with shrimp.
  5. Heat enough olive oil to cover the bottom of your pan, and add peppers turning to lightly sauté.
  6. Arrange peppers in pan shrimp side up, and drizzle with oyster sauce.
  7. Cover and simmer until done through.
