Chile Green Beans

Red and green make this a festive dish. It can be a hot as you wish. . just add more chilli. The chicken stock can be replaced with a vegetable sauce for a vegetarian dish. Show more

Ingredients

  • 2  tablespoons  oil
  • 2  onions, thickly sliced
  • 1  teaspoon chili powder
  • 1  tablespoon flour
  • 1  cup  chicken stock or 1  cup water
  • 1  lb green beans, trimmed and cut
  • 1  red pepper, seeded and sliced
  • 1  teaspoon tomato paste
  •  salt and pepper
  • 4  small tomatoes, peeled and quartered

Directions

  1. Heat oil in saucepan or wok.
  2. Add onions and fry until softened, about 8 minutes.
  3. Add chilli powder and flour.
  4. Cook stirring for 2 minutes.
  5. Gradually add stock stirring until smooth.
  6. Add beans, pepper and tomato paste.
  7. Lower heat and simmer 15 minutes.
  8. Season to taste.
  9. Add tomatoes and cook another 3 minutes.
