Chicpea Salad Sandwiches

Serves: 8

Ingredients

  • 2 (12 ounce) cans chickpeas
  • 2  stalks celery
  • 2  onions, quartered
  • 2  cups celery, chopped
  • 3 12-4  cups mayonnaise (depending on how wet you like it)
  • 4  tablespoons lemon juice
  • 1  pinch  salt and pepper
  • 4  tablespoons fresh parsley, chooped
  • 1  teaspoon  dill seed
  • 16  slices  whole wheat bread

Directions

  1. Smash the chickpeas to how thin you want the spread.
  2. Mix in the celery stalk, onion, mayonnaise, salt, pepper, parsley, dill seed, chopped celery, and lemon juice into the spread. Make sure the spread is mixed well.
  3. Spread the spread onto a slice of bread and then place another slice of bread ontop to create a sandwich.
  4. Serve and enjoy!
