Chickpea Soup

Ingredients
- 6 cups water
- 2 (17 ounce) cans chickpeas (rinsed and drained)
- 1 tablespoon olive oil
- 2 teaspoons dried sage
- 2 teaspoons dried rosemary
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1⁄2 teaspoon fresh ground pepper
- 2 tablespoons finely chopped parsley
Directions
- In a large pot, combine all ingredients except the parsley.
- Bring the mixture to a boil over high heat, then lower the heat and simmer, partially covered, for 20 minutes.
- Serve the soup garnished with the parsley.
