Chickpea Salad With Roasted Cumin

Ingredients
- 3⁄4 teaspoon cumin
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1⁄4 cup chopped onion
- 1 cup celery, sliced
- 1 medium tomatoes, seeded and chopped
- 1 (15 ounce) can chickpeas, drained and rinsed
- 2 tablespoons chopped fresh oregano
- 1 dash salt and pepper
Directions
- In skillet over medium heat, add cumin and toast 1 minute. Remove from heat.
- In small bowl, whisk together lime juice, olive oil and toasted cumin.
- In serving bowl, place remaining ingredients. Add dressing and toss to coat.
