Chickpea Curry

Ingredients
- 2 tablespoons vegetable oil
- 2 medium onions, minced
- 2 garlic cloves, minced
- 2 teaspoons fresh gingerroot, finely chopped
- 1⁄4 teaspoon ground cloves
- 1 1⁄4 teaspoons cinnamon
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- salt
- 1⁄2 teaspoon cayenne pepper (to taste)
- 1 teaspoon ground turmeric
- 2 (15 ounce) cans garbanzo beans, drained and rinsed
- 1 (14 1/2ounce) can diced tomatoes
- 1 cup chopped fresh cilantro
Directions
- Heat oil in a large skillet. Saute onions until tender. Add garlic, ginger and ground spices. Saute 1-2 minutes, stirring constantly.
- Add chickpeas. Add tomatoes with their juices. Stir well and simmer 30 minutes. Stir in cilantro just before serving.
