Chickpea and Spinach Tortilla

Ingredients
- 8 ounces chickpea flour
- 1⁄4 pint water
- 1⁄2 lb spinach, boiled and chopped
- 1 egg white, stiffly whipped
- 1 ounce breadcrumbs
- salt and pepper
- parsley
Directions
- mix all ingredients and fold in the egg white.
- spoon into hot oil and fry (like little small omelettes).
