Chickpea and Pepper Sandwich Spread

Ingredients
- 1 (15 ounce) can chickpeas
- 2 tablespoons black olives
- 1 tablespoon finely chopped red onion
- 1 tablespoon chopped fresh parsley
- 1⁄2 lemon
- 1 teaspoon cumin
- salt
- pepper
- 1 tablespoon olive oil
Directions
- Mix all ingredients in a bowl apart from the chickpeas and blend for a few seconds. Then add chickpeas washed and drained and mash with a fork leaving a crunch texture.
- Keeps in the fridge for up to 5 days,.
