Chicken With Sage and Peas

Ingredients
- 4 chicken breast halves
- 3⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 tablespoons olive oil
- 4 ounces pancetta, finely diced
- 1 medium onion, chopped
- 1 cup dry white wine
- 1 tablespoon minced fresh sage
- 1 (10 ounce) package frozen peas, thawed
Directions
- Season chicken with salt and pepper.
- Heat oil in a Dutch oven. Add chicken breasts and brown on both sides.
- Add wine and sage. Cover pan, reduce heat to low and simmer 25 minutes or until chicken is fork tender.
- Add peas and cook 5 minutes longer.
