Chicken With Olives

Ingredients
- 5 garlic cloves, chopped
- 1⁄4 cup oil
- 2 medium tomatoes, chopped
- 3 lbs chicken, cut into 8 serving pieces
- 1⁄2 teaspoon turmeric
- 1⁄2 teaspoon pepper
- 2 cups green olives
- 1 lemon, juiced
- 1⁄2 cup fresh cilantro leaves, finely chopped
Directions
- In a large pot, sauté the garlic in oil over medium heat until golden, about 3 minutes. Add the tomatoes and sauté for 2 to 3 minutes more, until softened. Add the chicken, turmeric and pepper and cook over low heat, uncovered, for 15 minutes, turning occasionally.
- Add enough water to almost cover the chicken (about 1 cup), and then add the olives. Cover and simmer for about 30 minutes more, or until the chicken is almost tender. Add the lemon juice and cilantro and cook, uncovered for 15 minutes more. Serve hot.
