Chicken With Mushroom Gravy- 'for Two'

Ingredients
- 1 whole chicken breast, split (or two small chicken breasts)
- 1⁄4 cup flour
- 2 teaspoons ranch dressing mix
- 2 tablespoons oil
- 1 (10 1/2ounce) can condensed cream of mushroom soup
- 1 cup sour cream
- 1 (4 ounce) can sliced mushrooms
- 2 tablespoons white wine (Milk will work also) or 2 tablespoons chicken broth (Milk will work also)
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1⁄4 teaspoon garlic powder
- cooked rice or pasta
Directions
- Mix 1/4 cup flour with 2 teaspoons ranch mix.
- Pound 1 split chicken breast to 1/2 in thickness. Pat dry and dredge in ranch mixture.
- Heat 2 tbs. oil in a skillet on medium heat and brown breasts on each side. (This should only take a minute or two. ).
- When lightly browned, set into a baking dish. (I use an 8 x 8).
- Stir together the can of mushroom soup, 1 cup sour cream, 1 can mushrooms, 2 tbs wine, salt pepper and garlic powder. Spread evenly over chicken, covering completely.
- You can now bake at 375 degrees for 25-30 minutes, or cover and set aside to bake later.
- Meanwhile, cook 2 servings of rice or pasta, and serve with the extra gravy.
