Chicken With Lime Butter

this is a quick summer meal that we have a lot with fresh fruit salad...and rice pilaf

  1. sprinkle chicken with salt and pepper --
  2. heat oil in large skillet over medium heat.
  3. saute chicken until light brown, about 3 minutes per side.
  4. cover, reduce heat to low.
  5. cook 10 minutes or until chicken is tender.
  6. remove chicken to serving platter.
  7. drain oil from skillet.
  8. add lime juice --
  9. cook over low heat until juice begins to boil. about 1 minutes.
  10. add butter, one tbls at a time, until butter becomes opaque and forms a thick sauce.
  11. remove from heat and stir in chives and dill.
  12. spoon sauce over chicken --
  13. serve immediately.
