Chicken With Grape Salad

Ingredients
- 1⁄2 lb boneless skinless chicken breast
- 1⁄2 cup red seedless grapes, cut in half
- 1⁄2 cup green seedless grape, cut in half
- 1 apple, cored and diced
- 1⁄2 cup fat-free mayonnaise
- 1 lemon, juice of
- 1⁄4 teaspoon ground black pepper
- 2 cups baby romaine lettuce, chopped
- 2 tablespoons chopped pecans
Directions
- Chop the chicken into bite-size pieces.
- Cook chicken in a large nonstick skillet over medium heat until chicken is no longer pink in the center, about 5 minutes.
- Combine apples, grapes and lemon juice in large bowl, then add chicken, black pepper, and mayonnaise.
- Divide lettuce on 2 small plates, spoon chicken mixture over lettuce, and top each with 1 tablespool chopped pecans.
