Chicken With Garlic and Lime

Ingredients
- 2 tablespoons vegetable oil
- 8 chicken breasts
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon lime rind or 1 tablespoon lemon rind, grated
- 1⁄2 teaspoon ground cumin
- 1⁄2 teaspoon oregano, dried
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 cup chicken stock
- 1⁄4 cup lime juice or 1⁄4 cup lemon juice
- 1 teaspoon cornstarch
Directions
- Using 1/2 the oil, brown the chicken on medium heat till cooked, then transfer to a plate.
- Add the extra oil if needed. Fry onions, garlic, lime rind, cumin, oregano, salt and pepper over medium heat until onion is softened, approx 4 minute.
- Add Chicken stock and lime juice, stir well, bring to a boil scraping all the brown bits. Return the chicken and any juices to the pan, cover and simmer until the juice runs clear when the chicken is pierced (15 min or so).
- Whisk cornstarch in a bowl with 2 tsp of water, then add the liquid around the chicken and simmer till thickened, about 2 minute.
