Chicken With Cranberry Wenselydale and Bacon

Ingredients
- 1 boneless chicken breast
- 3 ounces Wensleydale cheese with cranberries (crumbled)
- 1 slice cooked bacon (crumbled)
- 1⁄2 tablespoon Dijon mustard
- 1⁄2 teaspoon balsamic vinegar
- 1⁄2 teaspoon lemon juice
- 1⁄8 teaspoon pepper
- 1⁄4 teaspoon dried sage
- 1 garlic clove, minced
- salt and pepper

Directions
- Preheat oven to 375°F.
- Pound chicken breast flat. Combine Wenselydale cheese, bacon, mustard, vinegar, lemon juice, 1/8 teaspoon pepper, sage and garlic; spread on one half of flatten chicken breast.
- Roll chicken breast up and tie with twine. Salt and pepper to taste. Brush chicken with oil and brown in oven proof skillet. Place skillet with chicken in oven and cook untill done; about 15-20 minutes, depending on the size of the chicken breast.
