Chicken Wild Rice Soup

I got this recipe from Taste of Home 1995 annual recipe book. Very good!

Serves: 10-12

  1. In a large pot, sauté onion, celery and carrots in butter until onion is transparent. Reduce heat. Blend in flour and cook until bubbly. Gradually add chicken broth, stirring constantly. Bring to a boil for 1 minute. Reduce heat and add wild rice, cream, chicken, parsley, salt and pepper. Simmer for 20 minutes.
