Chicken Vegetable Soup With Endive

Ingredients
- 1 1⁄2 quarts chicken broth
- 1 1⁄2 lbs boneless skinless chicken, cubed
- 1 (14 ounce) can diced tomatoes
- 2 medium red potatoes, peeled and diced
- 1 large onion, chopped
- 1 celery rib, chopped
- 1 large carrot, chopped
- 2 large garlic cloves, minced
- 1 1⁄2 teaspoons dried marjoram
- 1⁄2 teaspoon dried basil
- 1⁄4 cup uncooked orzo pasta
- 4 cups coarsely chopped curly endive lettuce
- salt and pepper
Directions
- Combine all ingredients except orzo, endive, salt and pepper in slow cooker. Cover and cook on low 6-8 hours, adding orzo and endive during last 20 minutes.
- Season to taste with salt and pepper.
