Chicken Tikka

A lovely and easy chicken tikka recipe that can be made ahead and just grilled before eating.

  1. Put the chicken, salt and lemon juice in a bowl and mix together well.
  2. In a separate bowl, mix together the remaining ingredients, then add to the chicekn and stir to combine.
  3. Cover and refrigerate for at least two hours, overnight if possible.
  4. When ready to cook, thread onto skewers and baste with some remaining marinade.
  5. Cook on the BBQ or under a hot grill for 15 minutes, turning and basting frequently.
  6. Serve garnished with fresh coriander, lemon wedges and a little single cream, if desired.
