Chicken Tikka

Ingredients
- 450 g chicken breasts
- 1 teaspoon salt
- 5 tablespoons lemon juice
- 1 large garlic clove, finely chopped
- 1⁄2 onion, grated
- 1 tablespoon desiccated coconut
- 1 teaspoon ground cumin
- 1 1⁄2 teaspoons chili powder
- 1 teaspoon garam masala
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 2 teaspoons fresh coriander, chopped
- 100 ml natural yoghurt
- fresh ground black pepper, to taste
Directions
- Put the chicken, salt and lemon juice in a bowl and mix together well.
- In a separate bowl, mix together the remaining ingredients, then add to the chicekn and stir to combine.
- Cover and refrigerate for at least two hours, overnight if possible.
- When ready to cook, thread onto skewers and baste with some remaining marinade.
- Cook on the BBQ or under a hot grill for 15 minutes, turning and basting frequently.
- Serve garnished with fresh coriander, lemon wedges and a little single cream, if desired.
