  1. Season the chicken tenders with thyme, salt, and pepper.
  2. Heat olive oil in a large skillet, add the chicken and cook for 3 minutes on each side.
  3. In a small heavy saucepan, melt the butter over medium heat.
  4. Add the flour and cook for 1 minute, then whisk in the chicken broth and milk, cook until thicken, 2-3 minutes.
  5. Using a wooden spoon, stir in the cheese in a figure-right motion until melted, about 2 minutes.
  6. Serve the chicken topped with the Gouda gravy.
