Chicken Surprise

Ingredients
- 2 lbs chicken, cubed
- 1 onion, chopped
- 2 tomatoes, roughly diced
- 4 garlic cloves, finely diced
- 2 -4 jalapeno chilies, sliced
- 1 cup fresh spinach, chopped
- 1 cup bean sprouts
- 2 -6 dried hot peppers (de-stemmed, left whole)
- 1 (8 ounce) can pineapple chunks
- 1 (8 ounce) can water chestnuts, roughly chopped
- 1 (8 ounce) can bamboo shoots
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon oyster sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon chili oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
Directions
- 1. In a pan over medium heat, cook the chicken. Drain of excess fat and water.
- 2. Add soy sauce, sesame oil, oyster sauce, worcestershire sauce, chili oil, basil, and oregano. Stir to coat chicken with mixture.
- 3. Add onions and garlic. Cook until onions are slightly soft.
- 4. Stir in spinach. Cook until wilted.
- 5. Stir in chilies, pineapples, bamboo shoots, and water chestnuts. Let simmer for a few minutes.
- 6. Stir in bean sprouts, and tomatoes. Let simmer for a few minutes.
- 7. Serve over rice.
