Chicken Stew

Ingredients
- 4 boneless chicken breasts, cut into bite size chunks
- 6 large potatoes, cut into bite size chunks
- 1 lb baby carrots
- 1 small onion, diced (optional)
- 2 (8 ounce) cans cream of mushroom soup
- 6 ounces sliced mushrooms (optional)
Directions
- Spray the crock pot with a little cooking spray.
- Layer carrots, potatoes, onion, mushrooms in crock pot.
- Season each layer with a little salt and pepper.
- Arrange the chicken on top of the veggies.
- Cover the chicken with the soup and spread evenly.
- Cook on high for about 3 hours.
- Stir and cook on low for another hour until chicken and potatoes are cooked through.
