Ingredients
- 1 lb roasted boneless skinless chicken breast
- 1⁄2 teaspoon cornstarch
- 8 ounces fresh spinach, stems removed
- 4 cups chicken broth
- 3 slices fresh ginger, thin
- 1 teaspoon salt
Directions
- Shred chicken.
- Toss with cornstarch.
- Tear spinach into bite-size pieces.
- Bring broth and ginger to a boil and stir in chicken.
- Stir in spinach and salt, bring to boil, reduce heat, and simmer 2 minutes.
