Ingredients
- 1 lb boneless skinless chicken breast, chopped
- 1 large onion, minced
- 3 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 orange bell pepper, chopped
- 1 yellow bell pepper, chopped
- 8 ounces sliced cremini mushrooms
- 2 lemons, juice of
- lemon zest
- 2 quarts chicken broth
- 1 tablespoon dried basil
- 2 tomatoes, chopped
- cooking spray
Directions
- brown chicken in non stick cooking spray.
- remove chicken
- add all of the veggies and cook down for about ten minutes.
- add chicken back into pan
- add basil lemon juice and chicken broth salt and pepper to taste.
- cook for about 30 min serve with instant brown rice.
