Chicken Skewers With Peanut Sauce

  1. Mix dressing, peanut butter and soy sauce in a large bowl until well blended.
  2. Add chicken.
  3. Toss to coat.
  4. Cover and refrigerate for 10 minutes, to marinade.
  5. Preheat broiler or barbecue.
  6. Remove chicken from marinade. Discard marinade.
  7. Thread chicken evenly onto 8 soaked wooden or metal skewers.
  8. Cook on barbecue about 4 minutes on each side, or.
  9. Place on rack in broiler pan.
  10. Broil 4 to 6 inches from heat, on each side or until cooked through.
  11. Serve sprinkled with peanuts and onions.
  12. The skewers are good when served with cooked rice and a tossed green salad.
