Chicken Scaloppine

  1. Combine flour, salt and pepper; pound chicken thin and coat in flour mixture.
  2. Heat oil over medium heat and add chicken and garlic.
  3. Brown chicken on both sides.
  4. Remove garlic and reduce heat.
  5. Add onion, mushrooms, and lemon.
  6. Combine wine and water and add 1/3 of it to pan; cover and simmer on low for 25 minutes.
  7. Add remaining wine/water as needed to keep sauce simmering.
