Chicken Salad With Craisins & Almonds

Yields: 4 sandwiches

Ingredients

  • 13  ounces chicken or 13  ounces  left over chopped chicken
  • 14 cup mayonnaise
  • 12 cup craisins
  • 14 cup  almonds, chopped and toasted or 14 cup  wheat berries, prepared, cooked & cooled
  • 1  dash  salt and pepper
  • 1  dash curry powder (optional)

Directions

  1. Toast almonds or make wheat berries.
  2. Drain and shred chicken.
  3. Add mayonnaise, seasonings and craisins.
  4. Once almonds or wheat berries have cooled, add to salad.
  5. Mix together and serve or chill until ready to eat.
