"chicken" Salad

GREAT Vegan version of a sandwich favorite

  1. Drain chick peas and pour into meduim sized bowl, crush them up with a fork.
  2. Add in apple,green onion, almonds, salt and pepper and stir up.
  3. Add vegan mayo, mustard, soy yogurt and lemon juice and stir.
  4. Taste test it and add more ingredient if needed.
  5. Chill for an hour (optional).
  6. Serve in a wrap or sandwich with tomatoes, sprouts and spinach.
