"chicken" Salad

Ingredients
- 15 ounces chickpeas
- 1⁄4-1⁄2 cup vegan mayonnaise
- 1 tablespoon mustard
- 1⁄2 tablespoon soy yogurt (any flavor)
- 1 apple, chopped
- 1 green onion, chopped
- 1⁄4 cup sliced almonds or 1⁄4 cup walnuts
- 1⁄2 teaspoon lemon juice
- salt
- pepper
Directions
- Drain chick peas and pour into meduim sized bowl, crush them up with a fork.
- Add in apple,green onion, almonds, salt and pepper and stir up.
- Add vegan mayo, mustard, soy yogurt and lemon juice and stir.
- Taste test it and add more ingredient if needed.
- Chill for an hour (optional).
- Serve in a wrap or sandwich with tomatoes, sprouts and spinach.
