Chicken Rolls

Ingredients
- 2 ounces ground chicken
- 2 eggs, beaten
- 1 tablespoon grated onion
- 2 tablespoons breadcrumbs
- salt
- 2 -3 string beans
- 2 -3 carrot sticks
- cooking oil
Directions
- Crush the chicken. Stir in 2 teaspoons of the egg, the breadcrumbs, onion and pinch salt.
- Blanch the beans and carrots in salted water.
- Stir a pinch of salt into the remaining beaten egg. Scramble the egg in oil until set.
- Cut a sheet of foil into a 10 inch square and place it on a sushi rolling mat.
- Brush with a small amount of oil. Spread with the chicken mixture, then the egg.
- Put the carrots and beans in the center. Roll as if for sushi.
- Place in a hot steamer. Cover and cook on high for 7-8 minutes. Slice into rounds.
