Chicken Piccata

Very simple recipe that's quick and easy but tastes like you worked hard.

Ingredients

  • 2  whole boneless skinless chicken breasts
  • 14 cup flour
  • 4  tablespoons butter
  • 1  cup  fresh  sliced mushrooms
  • 1  garlic clove
  • 14 cup chicken broth
  • 2  tablespoons lemon juice
  • 2  tablespoons  chopped parsley
  • 1  tablespoon  Mrs. Dash table blend seasoning

Directions

  1. .Cut the chicken breasts in half lengthwise and pound between 2 pieces of plastic wrap until 1/2 inch thick.
  2. Sprinkle chicken with Mrs dash. and coat with flour.
  3. In a large skillet brown chicken in Tbsp of butter over medium heat for about 5 minutes and remove from skillet.
  4. Add remaining butter to the skillet and cook the mushrooms and garlic until tender.
  5. Return the chicken to the pan and add chicken broth and lemon juice.
  6. Simmer for 7 to 10 minutes stirring occasionally til sauce slightly thickens.
  7. Top with parsley.
