Chicken Parmesan Burgers

Ingredients
- 1 lb ground chicken
- 1⁄4 cup grated parmesan cheese
- 1⁄4 cup plain breadcrumbs
- 2 teaspoons italian seasoning
- 1⁄4 cup chopped parsley
- 1 garlic clove, finely minced
- 1 shallot, finely diced
- 1⁄2 cup thick spaghetti sauce
- 4 slices provolone cheese
- 1 cup sliced mushrooms
- 2 tablespoons butter
- salt and pepper
- 4 sandwich buns
Directions
- Lightly mix together first 7 ingredients for the burgers. Form into 4 patties.
- Saute mushrooms in 2 Tablespoons butter. Season with salt and pepper.
- Preheat broiler & spray the broiler pan with a little oil. Broil the burgers for about 4 minutes on the first side, then flip and broil for 3 minutes. Top each chicken burger with 2 tablespoons pasta sauce and a slice (or about 2T) of cheese. Place back under the broiler for 30-60 seconds, until cheese in melted and burger is cooked through. Brush buns with a little melted butter, sprinkle with Parmesan cheese and a little Italian seasoning, and place under broiler just until toasted.
