Chicken or Ground Beef Stroganoff

Ingredients
- 1⁄2 cup onion, chopped or sliced
- 1 small garlic clove, minced
- 1 tablespoon butter or 1 tablespoon margarine
- 1 lb ground beef or 1 lb chicken breast, cut into 1-inch pieces
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄4 teaspoon paprika
- 2 cups sliced mushrooms, fresh, if you are not a big fan of mushrooms decrease to 1 cup
- 1 (10 ounce) can cream of mushroom soup
- 1 cup sour cream
- wide egg noodles or rice
Directions
- In a hot skillet saute' onions in butter or margarine.
- Add in minced garlic, stir.
- Stir in beef or chicken pieces and seasonings; saute' about 5 minutes or until meat is browned or chicken juices are no longer pink.
- Add mushrooms, then soup and simmer about 10 minutes.
- Stir in sour cream and heat but DO NOT boil.
- Add a little milk if mixture is dry and season to taste.
- Serve on hot noodles or rice.
