Chicken Mushroom Fettuccine

Ingredients
- 200 g high fiber pasta
- 1 teaspoon olive oil
- 400 g chicken breasts, cut into strips
- 2 onions
- 2 garlic cloves
- 1 cup mushroom, sliced
- 400 g light evaporated milk
- 2 teaspoons parsley
- 1⁄2 teaspoon pepper
- 1 teaspoon salt
- 1 cup peas
Directions
- Cook Pasta according to directions.
- Heat oil in skillet.
- Onions for 2-3 minutes.
- Add chicken, garlic, and mushrooms. Saute until chicken is cooked almost through, about 5-6 minutes.
- Add evaporated milk, pepper, salt, peas and parsley. Bring to a boil. Reduce heat and simmer for an additional 5 minutes.
- Add pasta, stir to coat, and serve.
