Chicken Lo Mein

Tasty Chicken Lo Mein with Frozen Veggies

Ingredients

  • 2  tablespoons canola oil
  • 1  tablespoon  sesame oil
  • 12 cup oyster sauce
  • 12 cup soy sauce
  • 4  tablespoons rice vinegar
  • 1  lb  chicken tenders, cut in 3 pieces
  • 1  teaspoon white pepper
  • 1  teaspoon five-spice powder
  • 2  teaspoons fresh ginger, grated
  • 1  small onion, finely chopped
  • 2  tablespoons garlic, Crushed
  • 8  ounces  sliced mushrooms
  • 1 (14 ounce) bag  coleslaw mix
  • 1 (8 ounce) bag carrots, Shredded
  • 1 (16 ounce) bag  stir fry vegetables, your choice
  • 2  teaspoons cornstarch
  • 1  lb  lo mein noodles or 1  lb  whole wheat spaghetti

Directions

  1. Cook Lo Mein Noodles or Spaghetti, using directions on package. Drain Keep Warm Mix Oyster Sauce, Soy Sauce and Rice Vinegar. Use half to marinate chicken in a plastic bag, set aside other half. Heat oils in pan, remove chicken from bag and sprinkle with white pepper, discard marinade. Cook chicken till slightly browned on each side. Set chicken aside, in a good size bowl; keep warm. In the same pan add garlic, onion and ginger, cook one minute; add mushrooms and cook 4 - 5 minutes. Add Cole Slaw mix and carrots, cook till tender. Add Frozen vegetable bag, stir to cook till desired tenderness. Place Vegetables and noodles in bowl with chicken, mix. Mix cornstarch with remaining marinade and heat in same pan for I minute, till slightly thickened then pour over Lo Mein and mix.
