Chicken Livers in Wine

Yields: 1 pound livers
Ingredients
- 1 lb chicken liver
- 4 tablespoons butter
- flour (for dredging)
- salt and pepper, to taste
- 1⁄2 cup white wine
Directions
- Dip livers in flour and fry in butter in skillet or chafing dish. Season with salt and pepper to taste, and add white wine when almost done.
- Serve for brunch with scrambled eggs.
